Cake

To celebrate (or mourn) Nigel’s last day, I baked a krydderkage for yesterday. Something went wrong, though – I think I might have used the wrong raising agent. But I’ve tried it before, and it’s usually fine. Here’s the recipe:

  • 400 g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tbsp ground cinnamon
  • 2 tsp ground ginger
  • 2 tsp grond cloves
  • 1/2 tsp ground nutmeg
  • 1/3 l Guinness
  • 400 g dark muscovado sugar

Mix the flour with the spices. Stir in half the beer and mix well. Add the rest of the beer and finally the sugar. Put the mixture in a baking tray (20cm x 30cm) and bake for 50-60 minutes at 170 degrees Celsius. Serve with butter.

  • Decided it was time I grew up and pretended to be a responsible adult! Would you prefer I revert to infancy? (Oh and was embarrassed that all my baby photos are B&W – makes me feel older than you! Those 4 years and 4 days must have been significant in the photographic industry! 😉 )… maybe I could find a compromise from early childhood but in colour!

  • No! You’re too sweet! Besides, maybe I’m not ready to be a responsible adult after all – not now I’ve found the only colour photo of me as a baby! 😉

  • Just to bring you two infantiles back on track 😉 (You’re cute both of you BTW). I think you have used half the amount of baking agent ( – in Icelandic called luftidúft – jeg tænker, på ‘duft, der løfter ;-)). Didn’t I say 2 tskf natron, Thomas? Was it too klæg? or just too heavy? You remembered to let it bake enough, though?

  • Lots of stuff to comment on… Seb.: Jeg brugte en anden opskrift, som jeg før med held har brugt – problemet var vist snarere, at etiketten var faldet af dåsen, så det var måske ikke natron! :-/ Phyllis: I don’t speak Icelandic, only a bit of Old Norse. 🙁 I don’t yet whether I’ll be baking for next week – I guess it depends whether I’m in the mood or not. Seb.: Ja, kan du så se at blive yngre! Du ser jo tredive år ældre ud end os! 🙂

  • None of you have accepted the invitation for the coming friday, so I guess I don’t make cakes that day ;-( But june 10. there will be plenty of cakes at my childrens school, so be there 😉

  • Thomas and I are busy this Friday! Helping some (un)lucky people escape from the office. Will need to check my diary for the 10th 😉 Your Granny was born the same year as my Granny and granda. (born 26 & 29(!) feb that year)
